ingredients
3 tablespoons olive oil
2 onions, thinly sliced
1 garlic clove, finely chopped
1 green pepper, seeded and sliced in rings
4 large tomatoes, peeled and sliced
2 teaspoons dried basil
salt and pepper
4 white fish steaks, about 175 g (6 oz) each
2 teaspoons lemon juice
4 tablespoons dry white wine
2 tablespoons water
method
1. Heat the oil in a frying pan and fry the onions and garlic until softened. Add the green pepper rings and continue frying for 3 minutes. Remove from the heat and place half the mixture, discarding any oil, in a casserole.
2. Arrange half the tomato slices on top and sprinkle with half the basil and salt and pepper to taste. Place the fish steaks on top and sprinkle with the lemon juice. Add the remaining tomato slices, basil and onion mixture.
3. Pour in the wine and water. Cover and cook in the oven for about 45 minutes, or until the fish is tender.
Any firm, white fish steaks are suitable for this appetizing dish. Ask your fishmonger's advice about the best buy at any particular time of the year
