Citrus halibut steak recipe

1. Place 1 tablespoon of each grated rind and all the fruit juices in an ovenproof dish.
2. Add the fish and baste well. Cover and chill for 12 hours, turning the steaks over after 6 hours.
3. Cover the dish with foil and cook in the oven for 20 minutes. Garnish each portion with an orange, lemon and lime slice.
Prepare this dish sufficiently early in the day to allow time for it to marinate. As the steaks are turned after 6 hours, it is not practical to marinate them overnight!
