Baked halibut with fennel

Preparation time: 10 minutes,

Oven temperature: 180°C, 350°F, gas 4,

ingredients

serves 4
6 halibut steaks, about 175 g (6 oz) each, rinsed
2 large fennel bulbs, finely sliced, leaves chopped
40 g (1 1/2 oz) butter
2-3 garlic cloves, crushed
100 ml (3 1/2 fl oz) dry vermouth
Maldon or sea salt
freshly ground black pepper

method

1. Blanch the fennel bulbs in a large pan of boiling water for 2 minutes, then drain thoroughly. Melt the butter, add the fennel bulbs and garlic and cook gently for 10 minutes, or until softened.

2. Spread the fennel, with its butter, over the base of an ovenproof casserole, then add the fish. Pour the vermouth, with a little salt and plenty of pepper, over the fish.

3. Cook in the oven for 18-25 minutes, until the fish just flakes easily. Serve at once, sprinkled with chopped fennel leaves.

The cooking time varies depending on the thickness of the halibut steaks. Fish should never be overcooked so check if the halibut is ready after 18 minutes.
