Potato Pancakes

ingredients

makes 8
1 kg (2.2 lb) Potato
1 tsp salt
1 onion, chopped
1 medium egg
3 tbsp (25 g) flour
fat to fry, beef dripping (fat from roasted meat) or bacon fat

for the sauce

2 large cooking (tart) apples
2 tbsp (1 oz) 25 g butter
2 tbsp water
1/4 cup (4 tbsp) 50 g sugar
1/2 tsp cinnamon

method

to make the pancakes

1. Peel the potatoes and grate them on the fine side of the grater.

2. Add the salt, onion, egg and flour. Mix well.

3. Heat the fat until it smokes.

4. Shape the mixture into thin, flat pancakes, and fry them quickly on both sides.

to make the sauce

1. Peel, core and slice the apples and cook gently with the butter, water, sugar and cinnamon.

2. When soft and pulpy, beat thoroughly and rub through a sieve, or liquidise.

3. Divide the sauce between the eight pancakes and serve.
