Baked fruit salad

ingredients

serves 4
1 grapefruit
2 oranges
1 eating apple, sliced
8 dried apricot halves
300 ml (1/2 pint) unsweetened orange juice

method

1. Slice the grapefruit and oranges, leaving on the peel. Put the grapefruit, orange and apple slices in a casserole with the apricots. Use the ends of the oranges and grapefruit to cover the tops.

2. Pour in the orange juice and cover with a lid or foil. Bake in the oven for about 20 minutes until all the fruit is soft. Discard the fruit ends. Serve hot or cold.

Served hot, this nutritious dish is a healthy way to start breakfast on a cold morning. It is equally good served cold.
