ingredients
8 dried apricots, chopped
2 dessert pears, peeled, cored and chopped
2 bananas, thickly sliced
2 red dessert apples, cored and sliced
2 pineapple rings, chopped
2 teaspoons lemon juice
2 tablespoons dry cider
2 teaspoons clear honey
12 mint leaves, finely chopped, or 1/2 teaspoon dried mint
method
1. Put all the fruit in a 1.2 litre (2 pint) heatproof dish.
2. Mix together the lemon juice, cider and honey, then pour over the fruit. Stir in the mint and mix well. Cover and cook in the oven for 20 - 25 minutes. Chill slightly, then serve.
Mint can be grown very successfully in a large pot either on a window sill or in the garden where it is more easily controlled this way.
