Potatoes with Cheesy Bacon

ingredients

serves 6
2 lb (900 g) potatoes
2 tbsp fresh brown breadcrumbs
3/4 stick + 1 tbsp (3 1/2 oz) 100 g butter
8 oz (225 g) cottage cheese
175 g (6 oz) smoked back bacon, grilled until crisp
2 tsp salt
Good grinding of black pepper

method

1. Boil the potatoes in their skins until tender. Peel and slice.

2. Grease a shallow casserole dish and coat with some of the breadcrumbs.

3. Melt the butter and cheese together.

4. Layer the casserole with potato slices, some crisp bacon and half the cheese mixture.

5. Repeat, and sprinkle the remainder of the breadcrumbs on top seasoning to taste.

6. Bake uncovered in the oven Gas mark 5, 375°F (190°C) for about 1 hour.

7. To serve, place a large plate over the casserole dish right side down, turn the dish upside down.
