1. Use small potatoes for this recipe
2. Peel and divide potatoes into four lengthwise, then blanch in boiling water for about 12 minutes.
3. Drain, pat dry and place in a deep-sided roasting tin.
4. Make a syrup by blending all the other ingredients together.
5. Pour over the potatoes and bake in the oven Gas mark 5, 375°F (190°C) until golden brown and candied.
6. Baste several times during cooking.
