Rhubarb and Orange Compote

ingredients

serves 4
450 g (1 lb) fresh rhubarb, trimmed and thickly sliced
4 oranges, peeled and segmented
45 ml (3 tbsp) golden syrup
1.25 ml (1/4 tsp) mixed spice

method

1. Put the rhubarb into a 1.1 litre (2 pint) ovenproof dish or pudding basin and add the orange segments.

2. Spoon over the golden syrup and spice and stir to combine.

3. Cover with foil and put into a steamer over boiling water. Cover and steam for 35 - 40 minutes, until the rhubarb is tender.
