Sweet Potato Pie

ingredients

serves 8
8 oz (225 g) potato shortcrust pastry
2 medium eggs
8 oz (225 g) sweet potato, mashed
1/2 cup (90 g) dark brown sugar
2/3 cup (150 ml) 1/4 pt evaporated milk
3 tbsp (25 g) self raising (self rising) flour
1 tsp ground cinnamon
1/2 tsp nutmeg, grated
1/2 tsp ground ginger
Pinch ground cloves
1/2 tsp salt

method

1. Line a 23cm (9in) pie dish with potato shortcrust pastry.

2. Carefully blend all the filling ingredients together.

3. Bring to a simmer over a medium heat and cook for 7 minutes until slightly thickened, stirring constantly.

4. Pour into the pastry case and bake in the oven Gas mark 4, 350°F (180°C) for 30 minutes.

5. Serve cold with whipped cream.
