method
1. Put all the prepared vegetables in a suacepan with the white wine, vinegar, spices, rosemary and salt. Add enough water to cover, bring to the boil and simmer gently for 15-20 minutes. The vegetables should be slightly crisp.
2. Serve hot or cold.
Try a mixture of cauliflower florets, onions cut into eighths, sliced leeks and sliced fennel. Try to combine vegetables which take a similar cooking time.
