Turkey with broccoli

Preparation time: 15 minutes.
Cooking time: 20 - 25 minutes.
Calories: 288 per portion

ingredients

serves 4
4 turkey breasts, about 100 g (4 oz) each
450 g (1 lb) broccoli
salt

for the sauce

25 g (1 oz) butter
1 garlic clove, peeled (optional)
2 teaspoons cornflour
300 ml (1/2 pint) skimmed milk
300 ml (1/2 pint) chicken stock
1 bay leaf
25 g (1 oz) grated Parmesan cheese

method

1. Put the turkey breasts under a preheated hot grill and cook, turning, for about 15 minutes until tender.

2. Meanwhile, steam the broccoli for about 12 minutes until just tender. Arrange the broccoli on a warmed serving dish and place the turkey breasts on top. Keep hot.

3. To make the sauce, melt the butter in a saucepan and add the garlic. Cook gently for a few seconds then stir in the cornflour. Cook for 2 minutes, stirring.

4. Remove the garlic. Add enough skimmed milk and chicken stock to make a thin sauce. Add the bay leaf and cook for a few minutes, stirring, until the sauce thickens.

5. Remove the bay leaf. Pour over the turkey breasts and broccoli. Sprinkle with the Parmesan cheese and place under a preheated hot grill until lightly browned.

It is very easy to overcook broccoli so watch it carefully. Try leaving the lid balanced over the top of the steamer to allow some air to reach it.
