1. Slash one lime almost through in 8 places and insert an onion slice in each cut. Place inside the chicken cavity with the raisins.
2. Squeeze the juice from the remaining lime and mix with the oil, chilli powder and salt to taste. Pour over the chicken and leave to marinate for 1 hour.
3. Truss the chicken securely and place in a roasting pan. Cook in the oven for 1 1/2 hours, basting twice, or until the juices run clear yellow.
4. Serve the chicken with its juices on a bed of noodles. Garnish with lime and onion slices.
Always remove the giblets from a fresh chicken as soon as possible. Use the giblets immediately to make stock which can be frozen, if liked.
