2 large baked potatoes
8 oz (225 g) streaky smoked bacon
6 tbsp sweetcorn, tinned
1 stick (8 tbsp) 4 oz (112 g) butter
Grinding of black pepper
4 extra slices of streaky bacon, grilled, for garnish
method
1. Halve the baked potatoes and scoop out the flesh.
2. Grill/broil the bacon till crisp, including the extra slices.
3. Cut the 225 g (8 oz) of bacon into small pieces and mix with the potato, sweetcorn, butter and pepper.
4. Pile the mixture back into the potato shells and garnish with the remaining grilled/broiled bacon.
