1. Put the apricots in a bowl. Just cover with water and add the ground ginger. Leave to soak overnight.
2. Next day, put the turkey fillets on the rack of a grill pan and spoon over a little of the apricot soaking liquid.
3. Put under a hot grill for about 10 minutes, turning once. If necessary, spoon over more apricot liquid.
4. Meanwhile, simmer the apricots in the rest of the soaking liquid for about 10 minutes. Pour the cooked apricots into a blender and liquidize until smooth.
5. Arrange the cooked turkey fillets on a warmed serving dish and pour the apricot sauce over. Serve with green beans.
Dried apricots are one of the best sources of fibre. None of this is lost by liquidizing the fruit. They give a delicious flavour to the turkey fillets.
