Lyonnaise Potatoes

ingredients

2 lb (900 g) potatoes
2 medium onions
4 tbsp olive oil
salt and freshly ground black pepper
1 tbsp parsley, chopped

method

1. Boil the potatoes in their skins for 15 minutes.

2. Peel and cut into even slices.

3. Peel the onions and cut into thin rings.

4. Heat the oil in a deep frying pan and fry the onions until nicely browned.

5. Remove from the pan with a draining spoon and keep warm.

6. Add the potatoes to the pan and sprinkle with salt.

7. Cook on both sides until golden brown, then add the onions.

8. Season with a little more salt and a good grinding of black pepper.

9. Turn into a serving dish.

10. Garnish with chopped parsley

Great idea, but weights/sizes please

I've just taken a couple of potatoes from my veg rack; 1 is 3 ounces, 1 is 7 ounces. Neither is the smallest or biggest potato there. I love the recipe, but the size of potato will determine how long they need to be boiled for. Perhaps you could includea skwre test, or whether they nedd to be fully cooked, or par-boiled.

Thanks, though - I'm trying this in a few minutes, with some other help for sizes and timings.
