method
1. Layer the thinly sliced potatoes in a suitable ovenproof dish with the garlic, bayleaf and seasoning.
2. Fry the bacon until crisp and break into small pieces.
3. Scatter the bacon and dribble the fat all over the potatoes.
4. Cover with water that is almost, but not quite, boiling.
5. Bake in the oven Gas mark 7, 425°F (220°C) for 1 hour, until the potatoes are tender.
