1. Put the peas in a large saucepan with the potatoes, onion, mint sprig, lemon rind and juice and stock. Season with salt and pepper.
2. Simmer, covered, for 15 - 20 minutes, or until the peas are tender.
3. Puree in a liquidizer or rub through a sieve. Set aside to cool.
4. Adjust the seasoning to taste and chill for 2-3 hours. Serve chilled, sprinkled with the mint.
If necessary, use frozen petits pois. They will take less time to cook so add them to the other ingredients in the pan after 5-10 minutes.
