Preparation time: 20 minutes, plus chilling,
Cooking time: 20 minutes,
Calories: 118 per portion

ingredients

serves 4
350 g (12 oz) fresh shelled peas
225 g (8 oz) potatoes, chopped
1 onion, chopped
1 large mint sprig
finely grated rind of 1/2 lemon
2 tablespoons lemon juice
900 ml (1 1/2 pints) chicken stock
salt and pepper
1 tablespoon chopped fresh mint, to garnish

method

1. Put the peas in a large saucepan with the potatoes, onion, mint sprig, lemon rind and juice and stock. Season with salt and pepper.

2. Simmer, covered, for 15 - 20 minutes, or until the peas are tender.

3. Puree in a liquidizer or rub through a sieve. Set aside to cool.

4. Adjust the seasoning to taste and chill for 2-3 hours. Serve chilled, sprinkled with the mint.

If necessary, use frozen petits pois. They will take less time to cook so add them to the other ingredients in the pan after 5-10 minutes.
