2 lb (900 g) cauliflower
2 medium potatoes
2 tbsp oil for frying
2 tsp (10 g) 1/2 oz ginger, fresh or powdered
1 medium onion, chopped
1 tsp turmeric
2 tsp salt
1/2 tsp chilli powder
1 tsp garam masala
method
1. Break the cauliflower into small florets, keeping a reasonable amount of stalk.
2. Wash and drain.
3. Peel the potatoes and cut into even-sized pieces.
4. Heat the oil in a deep drying pan and fry the onions and ginger.
5. Add the turmeric and stir well.
6. Add the cauliflower and potato pieces and cook for 10 minutes, stirring occasionally.
7. Add the salt, chilli powder and garam masala, cover and cook for a further 10 minutes.
8. Before serving drain off any surplus liquid.
