1. Cook the potatoes in lightly salted water until tender.
2. Drain and mash well with the butter.
3. Beat in the eggs and seasoning.
4. Put the potato mixture into a piping bag fitted with a star nozzle.
5. Pipe out four flat circles about 10 cm (4 in) diameter on a baking tray lined with non stick paper.
6. Pipe another circle around the edges to make nests.
7. Divide the mince into each nest.
8. Garnish with the peanuts and parsley.
If serving immediately, brush the potato with a little beaten egg and brown under the grill.
