500 g (1 1/4 lb) duchess potato mixture
4 medium eggs, hard boiled (cooked)
1 medium egg, beaten
fresh brown breadcrumbs
few chopped chives Vegetable oil
method
1. Divide the potato mixture into four and make a parcel round each hard boiled egg.
2. Coat with beaten egg, then roll in the breadcrumbs and chives mixed together.
3. Heat the oil in a deep frying pan and cook each egg for about 5 minutes.
