40 g (1 1/2 oz) butter
1 small onion, skinned and finely chopped
225 g (8 oz) cottage cheese, sieved
2 eggs
1 slice of ham, trimmed of fat and chopped
100 g (4 oz) button mushrooms, wiped and sliced
salt and freshly ground pepper
30 ml (2 tbsp) chopped parsley
50 g (2 oz) cheddar cheese, grated
method
1. Melt 15 g (1/2 oz) butter in a pan and fry the onion for 5 minutes, until soft, then drain.
2. Melt the remaining butter in another pan and use to brush four individual ovenproof dishes. Place them on a baking sheet.
3. Beat the cottage cheese and eggs together. Stir in the ham, mushrooms and onion, then season to taste and mix in half the herbs. Divide the mixture between the four dishes and sprinkle with grated cheese.
4. Bake in the oven at 200°C (400°F) mark 6 for 10-15 minutes until golden. Garnish with the remaining herbs and serve immediately.
