Spicy tea bread recipe

Tea bread is a very popular teatime treat - it is sweet, spicy and moist, and is particularly good when spread with butter. It will become more moist if wrapped in foil and stored in an airtight tin for a day or two before eating.

1. Sift the flour, salt, spice and cinnamon into a mixing bowl.
2. Stir in the sugar. Rub in the butter.
3. Mix the eggs, treacle and half of the milk together and stir into the flour mixture.
4. Gradually stir in the remaining milk until the mixture drops easily from the spoon when it is shaken.
5. Spoon the mixture into a 1 kg (2 lb) loaf tin lined with greased greaseproof paper.
6. Bake in a fairly hot oven (190°C/375°F or Gas Mark 5) for 3/4 to 1 hour or until well-risen and brown, or when a skewer inserted in the centre comes out clean.
7. Brush with the beaten egg after 30 minutes. Cool on a wire rack before slicing.
