1. To make the pancakes, beat the flour with a pinch of salt, the eggs, mineral water and milk until smooth, cover the bowl and leave for 30 minutes.
2. Heat 3 tablespoons of oil a little at a time in a frying pan and fry thin pancakes from the batter.
3. Finely chop the bacon, onion and garlic and fry in the remaining oil until transparent. Chop and add the sausage and fry for a few minutes.
4. Dissolve the paprika and tomato puree in a little hot water and stir into the sausage mixture. Season with salt and pepper, the sugar and cayenne and spread the mixture over the pancakes.
5. Roll up the pancakes and arrange them in a buttered baking dish. Sprinkle with the cheese and dot with butter.
6. Brown in a hot oven (220°C, 425°F, gas 7) until the cheese has melted.
