1. Sift the floitr into a mixing bowl, make a well in the centre and crumble in the yeast. Stir with a little of the flour and
milk, cover the bowl and leave for 20 minutes.
2. Melt the butter, sprinkle it over the flour in the bowl, add the egg and a pinch of salt. Work all the ingredients in the bowl together with the remaining milk to make a dough and beat until light and airy. Cover the bowl and leave the dough to rise until doubled in volume.
3. Cut the onions into rings and fry them in half the butter until transparent. Beat the cottage cheese with the egg, the remaining butter, a little salt and the flour and mix with the onion.
4. Roll out the dough to a thickness of about 1 cm (1/2 in). Cut into 15 cm (6 in) rounds and turn up the edges slightly. Cover the rounds with the onion topping and bake for 15 minutes on a greased baking tray in a moderately hot oven (200°C, 400°F, gas 6).
5. Sprinkle with the cheese and return to the oven until golden.
