1. Put the chicken breasts into a glass or china bowl (not a metal one).
2. Squeeze the limes and pour the juice over the chicken.
3. Add the honey and the soy sauce. Grate the ginger and spread it over the chicken and leave to marinate in the fridge as long as possible - anything from 1 to 12 hours. Turn a couple of times.
4. Heat the grill until it is really hot. Put the chicken under it, skin side up. Grill for 4-5 minutes, then turn over, season, and grill for another 6 or 7 minutes.
5. If you have to, turn the heat down slightly, but make sure the chicken is cooked all the way through.
6. Meanwhile, put the marinade into a saucepan, bring to the boil and let it bubble for a few minutes.
7. Pour it over the chicken just before you serve with rice or mashed potatoes
