Spicy Meat Fritters

ingredients

makes 30
450 g (1 lb) potatoes, boiled and drained
450 g (1 lb) lean minced beef
1 onion, quartered
1 bunch spring onions, chopped
3 garlic cloves, crushed
5 ml (1 tsp) ground nutmeg
15 ml (1 tbsp) coriander seeds, dry-fried and ground
10 ml (2 tsp) cumin seeds, dry-fried and ground
4 eggs, beaten
oil for shallow-frying
salt and freshly ground black pepper

method

1. While the potatoes are still warm, mash them in the pan until they are well broken up. Add to the minced beef and mix well together.

2. Finely chop the onion, spring onions and garlic. Add to the meat with the ground nutmeg, coriander and cumin. Stir in enough beaten egg to give a soft consistency which can be formed into fritters. Season to taste.


3. Heat the oil in a large frying pan. Using a dessertspoon, scoop out 6— 8 oval-shaped fritters and drop then into the hot oil. Allow to set, so that they keep their shape (this will take about 3 minutes) and then turn over and cook for a further minute.

4. Drain well on kitchen paper and keep warm while cooking the remaining fritters.
