Birthday Cake recipe

ingredients

175 g (6 oz) butter or margarine
175 g (6 oz) caster sugar
3 eggs, lightly beaten
225 g (8 oz) self-raising flour
225 g (8 oz) chocolate chips
a little milk, if necessary

For the topping

75 g (3 oz) butter or margarine
225 g (8 oz) icing sugar, sifted
1 - 2 tablespoons milk
a few drops of green food colouring
1 (150-g (5.25 oz) packet chocolate animals

method

1. Line and grease a deep 18 cm (7 in) cake tin. Cream the butter or margarine and sugar until pale and fluffy. Gradually add the eggs.

2. Fold in the flour and chocolate chips, adding a little milk to make a fairly stiff dropping consistency. Spoon into the tin and bake in a moderate oven for 1 hour 20 minutes.

3. A metal skewer inserted into the cake should come out clean. Leave to cool in the tin for 5 minutes, then turn out to cool completely on a wire rack.

4. Beat the butter or margarine, sugar, milk and food colouring together. Spread over the top and sides of the cake and fork up. Decorate as shown. Finally add the candles.

5. To make a very quick, one-stage cake, use soft margarine and add 1 teaspoon baking powder to the ingredients. Beat all together until very soft and light. Stir in the chocolate chips last.

If the chocolate chips are not available, chop a bar of dark plain chocolate.
