1. Coarsely grate both types of cheese. Squeeze the garlic through a garlic press into the cheese. Sprinkle with the gin, cover and leave to stand for 2 hours. Cut the bread into large cubes.
2. Place the cheese in an earthenware fondue dish and melt on the hob over a low heat, stirring continuously. Slowly stir in the pepper, nutmeg, wine, sugar and lemon juice.
3. Blend the cornflour with the cream and water, stir into the cheese and bring just to the boil.
4. Place the fondue on the dining table over a small spirit lamp. Each guest spears cubes of bread on her or his fondue fork and stirs the bread in the cheese.
