1. Chop the onion and halve the mushrooms. Put all the ingredients into a large saucepan, bring to the boil and reduce the heat to simmer gently for 10 minutes.
2. Pour the soup into individual soup bowls and serve with warmed French bread.
Cook's Tip
If you have a garden, then try drying some herbs for the winter. Sage, thyme and tarragon, for example, can be tied in bunches and hung in a cool, dry place.
