method
1. Wash and dry the aubergines, cut them into finger-thick slices, lay out on a plate, then sprinkle the slices with salt and leave for 30 minutes.
2. Heat the oil in a frying pan. Wipe both sides of the aubergine- slices dry and fry for 3 minutes each side in the hot oil. Remove from the pan and keep hot on a warm plate.
3. Dice the ham and, onion. Melt the butter in a frying pan, fry the onion until transparent, add the ham and frozen peas and cook for a few minutes, stirring frequently.
4. Beat the eggs and season to taste, pour the eggs over the onion, ham and peas and stir with a wooden spoon over a low heat to make scrambled egg. Serve on the aubergine slices.
Serve with: Tomato Sauce, and boiled potatoes.
