1. Trim the ends from the cucumber. Peel it lengthways but leave some of the skin on, to make the salad look more attractive. Cut it in thin slices and lay them out on a large plate. Sprinkle with a little salt and leave for 15 minutes. Rinse well and dry.
2. Mix the vinegar, sugar and a pinch of salt together. Arrange all the vegetables in a bowl and pour over the vinegar, sugar and salt mixture. Cover the salad and chill before serving.
