Curried Prawns and Saltfish

ingredients

serves 4
450 g (1 lb) raw prawns, peeled
15 ml (1 tbsp) spice seasoning
25 g (1 oz) 2 tbsp butter or margarine
15 ml (1 tbsp) olive oil
2 shallots, finely chopped
1 garlic clove, crushed
350 g (12 oz) okra, topped, tailed and cut into 2.5 cm (1 in) lengths
5 ml (1 tsp) curry powder
10 ml (2 tsp) shrimp paste
15 ml (1 tbsp) chopped fresh coriander
15 ml (1 tbsp) lemon juice
175 g (6 oz) prepared saltfish, shredded

method

1. Season the prawns with the spice seasoning and leave to marinate in a cool place for about 1 hour.

2. Heat the butter or margarine and olive oil in a large frying pan or wok over a moderate heat and stir-fry the shallots and garlic for 5 minutes. Add the okra, curry powder and shrimp paste, stir well and cook for about 10 minutes, until the okra is tender.

3. Add 30 ml (2 tbsp) water, coriander, lemon juice, prawns and saltfish, and cook gently for 5 - 10 minutes.
Adjust the seasoning and serve hot.

Cook's Tip : Soak the saltfish for 12 hours, changing the water two or three times. Rinse, bring to the boil in fresh water, then cool.
