Pasta bolognese

ingredients

serves 4
1 onion
3 rashers streaky bacon
100 g (4 oz) celeriac
1 carrot
2 tbsp oil
2 cloves garlic, crushed
450 g (1 lb) lean minced beef
3 tbsp tomato puree
400 g (14 oz) can tomatoes
salt and pepper
150 ml (1/4 pt) beef stock
350 g (12 oz) pasta

method

1. Chop onion and bacon. Dice celeriac and carrot.

2. Heat oil in a large frying pan or saucepan. Ada onion and garlic and fry for 3 mins.

3. Add bacon, fry for 3 mins. Add celeriac and carrot and cook for 2 mins.

4. Add mince and cook for 3 - 4 mins, until brown.

5. Add tomato puree, tomatoes, seasoning and stock and stir well Bring to boil, cover and simmer for 30 mins.

6. Cook pasta in lightly salted boiling water for 10 - 12 mins or until just tender. Drain, top with sauce and serve.

Celeriac is the root of a type of celery. Replace with 2 sticks of celery if preferred.
