Turkey Drumsticks with Tomato

ingredients

serves 4
2 turkey drumsticks weighing 600 g (1 1/4 lbs) each
2 garlic cloves
Sprig rosemary
1 tsp salt
Pinch white pepper
3 tbsp wine vinegar
5 anchovy fillets
1 small can peeled tomatoes 400g (14oz)
3 tbsp olive oil
1 tbsp capers
2 egg yolks
Juice of 1/2 lemon
2 tbsp (1 oz) 25 g butter

method

1. Wash and dry turkey drumsticks. Peel garlic. Wash, dry and trim rosemary, then finely chop with garlic.

2. Rub drumsticks with salt, pepper and rosemary and garlic mixture, pour vinegar over them, cover and put aside to marinate for 2 hours.

3. Turn several times while marinating.

4. Finely chop anchovies. Drain tomatoes; chop roughly.

5. Heat oil and brown turkey thoroughly on all sides, then add anchovies. Stir in tomatoes and capers and simmer all together for 1 1/4 hours, adding some tomato juice if necessary.

6. Take meat off bone, cut into 3 cm (l 1/4 in) pieces and reheat in sauce.

7. Beat egg yolks with lemon juice and stir into sauce with butter.
