1. Mix together the breadcrumbs and herbs in a bowl and season well with salt and pepper. Place the flour in a polythene bag.
2. Put the beaten eggs in a shallow bowl and stir in the milk and a drop of oil. Put the breadcrumb mixture on a plate. Shake each drumstick in the bag of flour to coat, then dip first into the egg mixture and then into the breadcrumbs.
3. Heat the oil and butter in a large frying-pan over moderate heat. When the butter foams, add the drumsticks and fry gently for about 20 minutes until cooked through and golden brown on all sides.
4. Remove the drumsticks, drain on absorbent paper and cool.
