1. Cut the avocado in half lengthways and remove the stone. Scoop out the flesh with a teaspoon, leaving a thin lining of flesh on the inside of the shells.
2. Put the flesh in a bowl, sprinkle over the lemon juice, then beat until smooth. Add the mayonnaise, ham, chives and mustard, mix well and season to taste with salt and pepper.
3. Pile the mixture back into the avocado shells.
4. Line 2 individual plates with lettuce leaves, and arrange the filled avocados on the lined plates. Garnish the avocados with the tomato shapes and serve at once
