Delicious as a snack and with drinks, this dip will be a popular addition to your recipe file.
15 g (1/2 oz) butter
1 shallot, finely chopped
180 g (6 oz) Cheddar cheese, grated
120 g (4 oz) smoked or smoky cheese, grated
15 g (1/2 oz) plain flour
180 ml (6 fl oz) single cream
Salt and pepper
120 g (4 oz) cooked prawns, chopped

method
1. Melt the butter in a small, deep bowl for 30 seconds on HIGH.
2. Add the shallot and cook for 1 minute on HIGH to soften.
3. Toss the cheeses and flour together and add to the bowl with the shallot. Stir in the cream, salt and pepper.
4. Cook for 4 minutes on MEDIUM or until the cheese has melted. Stir the mixture twice whilst cooking. Stir in the prawns.
