Babanatza

A Passover pudding popular in Romania and Bulgaria, this is served as either a dessert or an accompaniment to meat.

ingredients

serves 6 to 8
6 matzos
1 cup raisins
6 eggs
1 cup coarsely chopped walnuts
2 green apples, peeled, cored, and diced
1/4 cup oil
1/2 cup honey
1/4 cup sugar
2 tablespoons margarine, cut in pieces
1 teaspoon ground cinnamon

method

1. Break the matzos into pieces. Pour a little boiling water over to soften them, then squeeze out the excess moisture. Mix matzos with the raisins and eggs in a bowl.

2. Mix the walnuts and apples in another bowl with the oil, honey, and sugar. Add this mixture to the matzo mixture and stir well.

3. Preheat the oven to 350°F.

4. Grease a deep 1 1/2 quart ovenproof dish and pour the mixture in. Sprinkle with cinnamon, then bake pudding for 1 hour.

5. Serve warm, or chill and serve with applesauce.
