Dried Lime Drink

This is a favorite with Jews from Basra in Iraq as well as Iranian Jews. Dried limes can be bought from Middle Eastern grocers, but you can also make your own by taking fresh limes and drying them slowly in a warm place, such as over a radiator. When the skins are tough, leathery, and yellow-brown, the limes are ready. They can be stored indefinitely in an airtight tin but should not be refrigerated.

ingredients

serves 4
4 dried limes
4 cups water
sugar

method

1. Crush the limes roughly with an upended rolling pin or in a mortar with a pestle.

2. Put them in a pan with the water, cover, and bring to a boil over high heat.

3. Reduce heat and simmer 10 minutes. Strain into glasses and add sugar to taste.

4. Serve immediately.
