Tea Cream

ingredients

1 1/2 tsp green tea leaves
1 1/2 fl oz (4 cl) dry vermouth
1 fl oz (2 cl) vodka
2 tbsp orange juice
2 tbsp lemon juice
7 oz (200 g) mascarpone
3 1/2 fl oz (100 ml) single crean
lemon balm for decoration

method

1. Prepare the tea with 7 fl oz of boiling water. After approximately 5 minutes strain through a sieve and leave to cool.

2. Mix with the dry vermouth, vodka, orange juice and lemon juice.

3. Stir in the mascarpone and single cream. Transfer into small dishes and leave to cool. Prior to serving decorate with the lemon balm.
