2 Medium tomatoes, blanched, peeled and chopped
1 Medium onion, finely chopped
1 Green chilli, finely chopped
Lime or lemon juice
Salt and pepper to taste
2 Tbs Grated fresh coconut or desiccated (shredded) coconut
method
1. Combine the tomatoes, onion and chilli in a small bowl. Pour over the lime or lemon juice and season to taste.
2. Spoon into a shallow serving dish and scatter over the coconut.
3. Cover the bowl and chill in the refrigerator until you are ready to serve.
