Gypsy Fish

ingredients

3 pretzels
4 fish fillets (7 oz/200g each)
2 tbsp chilli sauce
1 tbsp paprika paste salt
pepper
2 tbsp flour
1 egg
4 tbsp clarified butter
1 1/2 lb (800 g) pasta salad

method

1. Remove the salt from the pretzels and chop finely. Wash and dry the fish.

2. Mix together the chilli sauce and paprika paste and season with salt and pepper. Spread the mixture over the fish fillets, then turn them over in floi Beat the egg and dip the fish into it.

3 Cover with breadcrumbs, making sure they stick to the fish fillets. Melt the clarified butter in a frying pan and fry the fish from all sides.

4 Arrange the fish fillets on plates. Pasta salad makes an ideal accompaniment.
