Grated Carrot Salad (Carottes Rapees) recipe

ingredients

1/2 kg (1 lb) Carrots

for the dressing

3 Tbs Olive oil
1 1/2 Tbs White wine vinegar
1 tsp Lemon juice
1/2 tsp Salt and pepper to taste Sugar

method

1. First make the dressing. Put all the ingredients into a screw-topped jar and shake vigorously.

2. Grate the carrots into a shallow salad bowl. Pour over the dressing and, using two large spoons, carefully toss to blend thoroughly.

3. Cover and chill before serving.
