1. Pour the rum into a cup and stand in a pan or bowl of hot water to warm through gently. In a separate cup, mix the orange juice with the cinnamon and nutmeg.
2. Melt the butter in a large, heavybased frying-pan over low heat. Lightly brush fans with egg white, then add them to the pan and fry gently for about 5 minutes, turning once, until golden brown on both sides. Sprinkle over the sugar.
