Herring Spread with Sour Cream recipe

These herrings can be made with yogurt instead of sour cream if you want a lower-calorie version. Fresh herbs, such as parsley, chervil, or cor-iander, can also be added to the mixture.

method
1. Drain the herrings and rinse with water. Fillet the fish, removing all bones.
2. In a bowl, blend the roe with the sour cream and mayonnaise.
3. Puree the potato in a food processor or blender and add the herrings. Blend well, then stir the herring mixture into the sour-cream mixture and season with pepper.
4. Chill, covered, until ready to use, then serve as a spread for crackers or matzo.
