Chopped Liver

There are really 2 versions, the coarsely chopped, and the smooth liver pate type, which is more elegant. This first version is the coarser.
Meat, Kosher for Passover

ingredients

serves 8
6 tablespoons chicken fat
4 large white or yellow onions, coarsely chopped
1 pound koshered chicken livers
1/2 teaspoon black pepper
1/2 teaspoon salt

method

1. Melt the fat in a large skillet and saute the onions until golden. Remove from the skillet. Saute the chicken livers briefly in the same pan just long enough to warm them and coat them with fat.

2. Remove livers from pan and combine with onions, chopping together. Season well with pepper and salt.

3. Serve with rye bread or matzo.
