Chicken Fillets with Cheese Sauce

ingredients

serves 4
600 g (1 1/4 lbs) chicken breast fillets
4 pinches each salt and white pepper
1 tbsp plain flour (All purpose)
1 egg
3/4 cup (100 g) 4 oz blanched almonds
3 tbsp clarified butter
3 tbsp dry white wine
1 cup (8 fl oz) single cream
4 oz (100 g) Gorgonzola cheese
Pinch freshly grated nutmeg
Pinch sugar

method

1. Wash and dry chicken fillets, then rub salt and pepper into both sides. Coat fillets first in flour, then in lightly beaten egg and finally in chopped almonds, Press coating firmly onto chicken.

2. Heat clarified butter in pan. Fry chicken fillets for about 4 minutes on each side over a medium heat Remove from pan and keep warm.

3. Deglaze pan with wine and cream, stirring as sauce comes to the boil.

4. Cut rind off Gorgonzola, mash cheese with a fork and add it to sauce, stirring as it melts.

5. Season sauce with nutmeg, sugar and additional salt and white pepper if desired.

6. Arrange chicken on dish with cheese sauce and serve hot.

7. Ribbon noodles with buttered broccoli or a green salad go well with this dish.
