1 crisp Lettuce, shredded
2 Oranges, peeled, pith removed and separated into segments
1 Large tomato, thinly sliced
1 Tbs Lemon juice
1 Tbs Vegetable oil
1 tsp Chopped chives
Salt and pepper to taste
method
1. Arrange the lettuce on a serving plate.
2. Put the orange segments and tomato slices in a bowl. Combine all the remaining ingredients in a screw-top jar and shake well to blend. Pour over the fruit and toss well to blend.
3. Arrange the fruit and dressing mixture over the lettuce and chill in the refrigerator for 15 minutes before serving.
