1/2 kg (1 lb) Fettuccine
50 g (2 oz) 4 Tbs Butter
for the sauce
125 g (4 oz) Prosciutto, cut into thin strips
50 g (2 oz) Lean cooked ham, cut into strips
175 g (6 oz) Garlic sausage, cut into thin strips
3 Large tomatoes, blanched, peeled, seeded and chopped
1 tsp Dried basil
Salt and pepper to taste
1. Cook the fettuccine in boiling, salted water for 5 to 7 minutes, or until 'al dente', or just tender.
2. Mix together the prosciutto, ham, garlic sausage, tomatoes, basil and seasoning.
3. Drain the fettuccine in a colander, then transfer to a warmed, deep serving bowl. Add the butter and, using two large spoons, toss gently until the butter melts.
4. Stir in the ham mixture until the pasta is thoroughly coated and served at once.
