Noodles with Ham (Fettuccine Con Prosciutto)

ingredients

serves 4 - 6
1/2 kg (1 lb) Fettuccine
50 g (2 oz) 4 Tbs Butter

for the sauce

125 g (4 oz) Prosciutto, cut into thin strips
50 g (2 oz) Lean cooked ham, cut into strips
175 g (6 oz) Garlic sausage, cut into thin strips
3 Large tomatoes, blanched, peeled, seeded and chopped
1 tsp Dried basil
Salt and pepper to taste

method

1. Cook the fettuccine in boiling, salted water for 5 to 7 minutes, or until 'al dente', or just tender.

2. Mix together the prosciutto, ham, garlic sausage, tomatoes, basil and seasoning.

3. Drain the fettuccine in a colander, then transfer to a warmed, deep serving bowl. Add the butter and, using two large spoons, toss gently until the butter melts.

4. Stir in the ham mixture until the pasta is thoroughly coated and served at once.

I made this for my partner and myslef last night. It worked really well! I didn't have egg substitute so I used 5 egg whites and a whole egg (from what I can see from nutritional info available I'm at least close to the fat and cholesterol savings). Nice job!P.S. I'm using the extra 5 egg yolks to use in brownies for work. I look a lot thinner if I keep them all bigger
